4 Recipes for Mexican sauces made with volcanic stone molcajete

1.- Molcajete Red Sauce

Ingredients:

  • 3 medium tomatoes
  • 2 dried red chilies (guajillo or tree)
  • 2 cloves of garlic

Preparation:

Roast the tomatoes and dried chiles on a griddle or skillet until lightly toasted and fragrant.

  • chopped fresh cilantro
  • Salt to taste
  • Lemon juice

Preparation:

Cook the tomatoes and chiles in water until soft. Lightly grill the onion and garlic cloves on the grill. In the molcajete, puree the cooked tomatoes, chilies, onion and garlic. Add fresh chopped cilantro, salt and a few drops of lemon juice. Mix well. Taste and adjust the seasoning to your liking.

3.- Guacamole

Ingredients:

  • 2 ripe avocados
  • 1/4 white onion, finely chopped
  • 1 green chile (jalapeño or serrano), finely chopped
  • 1 tomato, seeded and chopped
  • chopped fresh cilantro
  • Lemon juice
  • Salt to taste

Preparation:

In the molcajete, mash the avocados until you obtain the desired consistency. Add the chopped onion, chili, tomato and cilantro. Mix gently. Add the lemon juice and salt to taste. Mix again. Taste and adjust flavors as needed.

4.- Chipotle Sauce in Molcajete

Ingredients:

  • 10 dried chipotle chiles
  • 2 tomatoes
  • 2 cloves of garlic
  • 1/4 white onion
  • ground cumin
  • Salt to taste

Preparation:

Toast the dried chipotle peppers on a griddle until fragrant. Cook the tomatoes and garlic cloves with water until soft. In the mortar, crush the toasted chipotle chiles. Add the cooked tomatoes and garlic, and continue blending. Add the chopped onion, ground cumin and salt to taste. Mix well. Adjust the flavors and serve with tacos, grilled meats or corn chips.
